These same recipes have been used for the past 5 generations in her Mamma's family and are still the same ones they use today. They are classical regional Italian recipes you can use for capocollo, pancetta, coppa, bresaola and even prosciutto.

Our Italian Cured Meats Starter Pack includes 2 x recipe rub premixes, collagen sheets and casings and the required sized curing net to produce between 4-6 rolled cured meats (depending on the size of your meat). You will also get twine and stainless steel hanging hooks to keep your meat safe while drying. We suggest you buy our latest book, Rump to Rafters, to get all the techniques involved in making your own cured meats.
