This Sanelli knife has been specially made for finely slicing cured prosciutto and hams. It's thin, long blade makes slicing paper thin slices effortless. It can be used to cut meats directly off the bone, as well as boneless hams.

It is has a 24cm blade length of a semi-rigid construction. The blade on this knife is made of surgical stainless steel that has undergone a thermal treatment in liquid nitrogen which gives it it's hardness and excellent power for slicing.

The convex edge of the blade is made by hand, a guarantee of durability, ease of use and speedy resharpening.

The handles are made from an ergonomic design, with a textured surface to provide a secure grip. The handles are made of a material filled polypropylene that meet food processing regulations (food grade).

This is knife is designed and made to withstand sudden changes in temperature and therefore is dishwasher safe and can be safely sterilized.
