Using the carving stand is simple - the leg of prosciutto or ham sits in the shoe where it is supported by a metal prong. The heart of the prosciutto is held tightly in position by an adjustable stainless steel clamp.

This particular model is our standard model. It consists of strong solid natural wooden base, with wooden stand and fixed metal leg clamp and shoe. The wooden base is sealed and varnished so that is can be wiped clean easily and no oils, etc. from your meat can be absorbed into the wood.
