A Salami Pricker Piercer is used for fresh and cured sausage production as well cured meats making. The purpose of this gadget is to remove the excess air that is trapped inside your casings.
This Salami Pricker is made from a high quality food grade PVC base that is embedded with stainless steel needles. These needles are fine and sharp enough to penetrate the casing without causing it to tear, creating a hole large enough to expel the excess air yet small enough to avoid any bacteria or other contaminants to penetrate and infect your meat. The Salami pricker/piercer may come in a colour other than the one seen in the picture however the functionality is identical.
