This salami Calabrese style recipe is a traditional recipe that has been developed, mastered and enjoyed over many generations and continues to be used throughout the southern regions of Italy today.

Our premixes are pure seasonings and contain no artificial fillers, flavours or "sausage meal". For more expert assistance in making salami and small goods we recommend our 'Secrets in Salami' book or 'Rump to Rafters' book.
