This collagen fibrous salami casing is used for making air dried, smoked and cured salami (for more in depth information on producing salami see our Secrets in Salami book on processing and curing). This casing is ideal for producing medium sized salami such as the Salame Genovese and Felino.

This salami casing is manufactured from a man-made, edible collagen (food and digestive safe) and contains NO animal products.

Each individual casing comes pre-tied at one end for easy filling and ready for hanging. These casings are also flavourless and can be easily stored in a standard food safe container.

Salami making couldn’t be any easier when using these casings.

*It is not recommended that you use this casing for producing fresh sausages

Directions for use

Submerse each casing in cool water or wine until soft, slide the casing on to your filling funnel ready to fill.
